Nothing better than new recipes for the Christmas Holidays.

Yoniko Pumpkin RollYONIKO PUMPKIN ROLL

Bake at 375C
1st Step
Beat for 5 minutes:
3 eggs
1 cup of sugar
1 tsp of lemon juice
2/3 cup of canned pumpkin
Dash of oil
2nd Step:
Sift and add to first mixture:
¾ cup flour
1 tsp soda
½ tsp salt
2 ½ tsp pumpkin spices

I now use parchment paper in a 9 by 13 inch cookie sheet with sides. (I used to grease some cookie sheet and just made it work) Sprinkle with 1 cup of chopped walnuts.  Bake 17 minutes.
Turn onto 2 attached paper towels that is sprinkled with powdered sugar and roll the cake. Cool in the fridge ½ hour.

Mix 8 oz softened cream cheese
½ cube of butter
1 cup powered sugar
Until creamy

Unroll cake, spread cream cheese mix and roll cake up again. Sprinkle with powered sugar. Can be frozen. VERY popular.
I love parchment paper for baking. Well worth it.
